Recently, because of a long bout with health problems, I have been trying to to cut back on white flour, and gluten containing foods. I looked for recipes that would be delicious but minimally processed and white flour and/or gluten free. I came across many recipes that required special ingredients that need to be special ordered, or are too difficult to locate. Then, I came across this super delicious and EASY recipe, requiring no unusual ingredients and minimal prep time. You only need 3 ingredients:
1 cup of creamy peanut butter
1 large egg
1 cup sugar
Preheat oven to 350 Degrees.
Combine all ingredients and drop by spoonfulls on greased baking sheet. Flatten with a fork, and cook for 8 minutes.
Enjoy with a tall glass of (soy?)milk!

Perfect Fall Meal-Easy Peasy Crock Pot Roast
Today I made the perfect fall meal-an easy beef roast in the crock pot. It's super easy and super delicious, and the perfect end to a chilly fall day. Here is the recipe:
Ingredients:
1 lb beef stew meat
1 medium/large onion
1or 2 stalks celery
1/2 package baby carrots, rinsed
4 or 4 small red potatoes
2 cans cream of celery condensed soup
1/2 soup can of water
Salt and pepper to taste
Directions:
Chop up whole onion, celery stalks, and quarter potatoes.
Add chopped vegetables, baby carrots and meat to crock pot, along with soup and water, and stir.
Turn crock pot on high, and cover. Cook on High for 6-8 hours, (depending on size of crock pot). Replenish with water if all liquid evaporates before meat is done. Season to taste and enjoy!
